  1. Drain the cans of jackfruit. Thinly slice each jackfruit triangle lengthwise. Add to a large bowl.
  2. Drain the cans of chickpeas and add to the large bowl.
  3. Add the remaining shawarma ingredients to the large bowl and mix.
  4. Cover the bowl with plastic wrap and refrigerate the bowl for at least 2 hrs or overnight.
  5. Preheat the oven to 375 Fahrenheit.
  6. Remove the marinated shawarma from the refrigerator and spread out the ingredients in a layer on two baking sheets. You do not need parchment paper or any oil spray.
  7. Roast the sheets for 35 to 40 min.
  8. Assemble all ingredients in pita bread like a sandwich.
