Vegan Shawarma

Shawarma Ingredients ¶
- 2 cans of non-sweet jackfruit (preferably from Trader Joe's)
- 2 cans of cooked chickpeas
- 3 large red onions (finely chopped)
- 3/4 cups of olive oil
- juice of 1 lemon
- 9 cloves garlic (minced)
- 3 tsp salt
- 3 tsp black pepper
- 4 tsp ground cumin
- 3 tsp sumac
- 2 tsp smoked paprika
- 1.5 tsp ground cinnamon
Serving Ingredients ¶
- 2 bags of pita
- 1.5 large containers of hummus
- 6 fresh tomatoes (sliced)
- 1 head of lettuce leaves
Instructions ¶
- Drain the cans of jackfruit. Thinly slice each jackfruit triangle lengthwise. Add to a large bowl.
- Drain the cans of chickpeas and add to the large bowl.
- Add the remaining shawarma ingredients to the large bowl and mix.
- Cover the bowl with plastic wrap and refrigerate the bowl for at least 2 hrs or overnight.
- Preheat the oven to 375 Fahrenheit.
- Remove the marinated shawarma from the refrigerator and spread out the ingredients in a layer on two baking sheets. You do not need parchment paper or any oil spray.
- Roast the sheets for 35 to 40 min.
- Assemble all ingredients in pita bread like a sandwich.
