Thousand Layer Cake (千层蛋糕)

Layers ¶
- any fruit of choice
- 120g cake flour
- 20g butter
- 3 eggs
- 250ml milk
- 20g whipped cream
- 1g salt
- 20g sugar

- any fruit of choice
- 250g whipped cream (may be more depending on how much you want to use)
- 25g sugar

Layers ¶
- Add eggs, sugar, and salt in a bowl and mix.
- Add cream and milk to the bowl and mix.
- Melt butter, then add it to the bowl and mix.
- Pour cake flour into mix through metal strainer. Blend some of the fruit into a liquid consistency and add to the mix as well.
- Pour entire mix through metal strainer multiple times for best consistency (liquid should be as smooth as possible).
- Cook as many layers as possible using a stove pan and the mix (each layer should be pretty thin but not too thin) (Low heat without butter works well).
Filling ¶
- Cut up fruit into small pieces and blend until mostly smooth (don't make it liquid).
- Mix the fruit blend with the whipped cream evenly.
Together ¶
- Place individual layers on a plate, spreading a thin coat of the whipped cream/fruit blend in.
